My cousin made this for me when I visited her recently.I don't remember the ingredients very well, so this is my variation. It is definitely the quickest and best chicken fry I have ever eaten or made!
If you have time, you can marinate the chicken before hand.I did not but I guess it will make a difference!
8 Red chillies
1/2 tablespoon Mustard seeds
1/2 tablespoon Jeera
1/2 tablespoon Methi seeds
1 bunch curry leaves
1 onion chopped fine
1 1/2 tablespoons ginger-garlic paste
1 pound Chicken
1 teaspoon Turmeric powder
2 tablespoons Chilli powder
1 tablespoon Coriander powder
1/2 tablespoon Garam Masala
Salt-to taste
Lime
Method:
1.In a shallow pan, add oil and the first 5 ingredients.Cover until the mustard and curry leaves stop spluttering.
2.Add the chopped onions and fry until they are nicely browned.
3.Add the ginger-garlic paste and continue frying until it loses its rawness.
4.Add Marinaded chicken and remaining ingredients and salt.
5.Fry the chicken until cooked, stirring occasionally as the masalas start sticking to the pan.
6.Add lime juice or vinegar just before taking off the stove.
Serve with rice or rotis.

Green Chicken Masala
This is a variation on a kebab recipe my niece gave me!
Excuse the name of the dish, but there is no better way of describing it :-)
Ingredients:
1 Bay leaf
2-3 pods cardamom
1 cinnamon stick
2-3 cloves
1 cup milk
Marinade:
1 pound Chicken
1 teaspoon Turmeric powder
3 tablespoons Chilli powder
1 tablespoon Garam Masala
Salt-to taste
Vinegar
To Grind:
1 Large onion
8 Green Chillies
2 tablespoons Ginger-garlic paste
1 Bunch cilantro leaves
1 1/2 cups Spinach
Method:
1.In a shallow pan, add oil and fry whole spices(Cardamom,clove,bay leave,cinnamon).
2.Add ground paste,fry till the onions are cooked and the raw smell is gone.
3.Add Marinated chicken, cook on high for 2-3 minutes.
4.Add milk.
5.Cover and cook on low heat for 20 minutes, or until the chicken is cooked.
Serve with rice or rotis.

4 cups of mixed vegetables of your choice(Carrots,peas,beans,Cauliflower,Brocolli)

One Mediume onion(sliced)
6 Green Chillies
1 Tablespoon Ginger-Garlic paste
1 1/2 teaspoons coriander powder
1 1/2 teaspoons chilli powder
1/2 teaspoon garam masala
2 cups Half n Half
15 almonds-ground to a paste
Method:
1.Fry whole garam masala.
2.Add one onions,6 green chillies and ginger-garlic paste.Fry until the onions are well cooked.
3.AddThe mixed vegetables and turmeric,coriander powder,chilli powder and garam masala.
4.Fry well until the spices have blended and then add the half n half and almond paste.
5.Cover and simmer until the vegetables are well cooked.
Garnish with chopped cilantro and serve with rice or parathas.

Ingredients:

2 cups of Mixed veggies(peas,carrots,cauliflower)
1 onion(finely chopped)
10 pods of garlic(minced)
8 green chillies(chopped)
5 tablespoons soya sauce
1 tablespoon hot sauce
1 1/2 teaspoon powdered pepper
2-3 crushed red chillies
2 eggs
Method:
1.In a little oil,fry the onions,chillies and garlic until the onion is cooked and the garlic is well roasted.
2.Add the sauces and mixed vegetables.
3.Once cooked,add the cooked rice and fry well.
4.Add the pepper and crushed red chillies.
5.Beat the eggs with a little pepper and salt and scramble them on the side.
6.Move the fried rice to a serving dish and top with the scrambled egg.
Serve with Chilli Chicken.

Mango Souffle

My niece and I tried this out together and it came out soooo well, I just had to put it up!
Ingredients:
1 can mango pulp(approximately 3 cups)
1/2 cup sugar
4 eggs yolks
6 egg whites
8 teaspoons gelatin
2 cups whipped cream(I used Cool Whip and it works very well)
Method:
1.In a mixing bowl,combine the egg yolks,mango pulp and sugar.
2.In a different dish,Whisk egg whites until stiff and keep it chilled.
3.Soak the gelatin in water.Then, add hot water until all the gelatin has dissolved.
4.Immediately add this gelatin solution to the mango pulp mixture,stirring continuously to avoid lumps.
5.Add the whipped cream and mix well.
6.Gently fold in the egg whites and once this is well folded,transfer to a serving dish and move to the refrigerator.It will take approximately 4-6 hours to set.
Serving suggestion: Scoop it out into margarita glasses and add a dollop of whipped cream on top!
Tips/Hints:
1.The only trick in this recipe is getting the egg whites right..It is the defining step in the souffle and gives it that lightness and foamy texture. Here are some steps you can follow that will guarantee perfect egg whites!
-Make sure there is absolutely no yolk or water in the egg whites.
-Chill the egg whites and the bowl it is beaten in.
-If you're whipping a lot of egg white,transfer the stiff egg white to the freezer as it gets done.
2.f you use ordinary cream and whip it up at home,you will need to add sugar accordingly.
3.These proportions make about 10-12 generous servings!If you want to make less,then just do the math,but make sure you have enough gelatin.If it turns out too hard,you can always leave it out until it softens!

Tuna Cutlets
Hi all,
This is my first post on my new food blog.I thought I'll start off with a crowd favorite which is extremely simple to make and almost impossible to mess up!
I stumbled upon this when I had leftover mashed potatoes at home!
Here goes..My easy-to-make recipe for Tuna cutlets.
Ingredients:
1 cup tuna(drained)
2 cups mashed potatoes(I use the instant mashed potatoes cos its just so much faster!)
1 1/2 medium onions(finely chopped)
1 1/2 teaspoons Garam Masala Powder
1 1/2 teaspoons pepper
8 green chillies
1 tablespoon ginger garlic paste
2 eggs(beaten well with salt and pepper to taste)
1 cup bread crumbs
Method:
1.Fry the onions until they are nicely browned,add the ginger-garlic paste,green chillies,garam masala and tuna.Fry nicely until the mixture is nicely cooked.Canned tuna is already cooked you just need to fry it along with the onions so that it gets the flavor.
2.When this mixture has cooled down,combine the mashed potatoes and pepper.Add salt to taste and mix well.
3.Make tiny balls and flatten to form small cutlets.Roll each cutlet in the egg mixture and then coat well with the bread crumbs.
4.Deep fry in oil until the cutlets are golden brown.
Variations:
If you want a healthier option you can make bigger patties and shallow fry them.All the ingredients are cooked except the egg coating so you don't need to deep fry it.It just tastes better that way...sigh.. ;-)
On one occasion, I added bread crumbs to the tuna-potato mixture as well.The result was quite interesting cos the crumbs got nice and crisp when fried and the cutlets had this lil crunch to them..
