Vegetable Korma

Ingredients:
4 cups of mixed vegetables of your choice(Carrots,peas,beans,Cauliflower,Brocolli)
1 Bay leaf
2-3 pods cardamom
1 cinnamon stick
One Mediume onion(sliced)
6 Green Chillies
1 Tablespoon Ginger-Garlic paste
1 1/2 teaspoons coriander powder
1 1/2 teaspoons chilli powder
1/2 teaspoon garam masala
2 cups Half n Half
15 almonds-ground to a paste


Method:
1.Fry whole garam masala.
2.Add one onions,6 green chillies and ginger-garlic paste.Fry until the onions are well cooked.
3.AddThe mixed vegetables and turmeric,coriander powder,chilli powder and garam masala.
4.Fry well until the spices have blended and then add the half n half and almond paste.
5.Cover and simmer until the vegetables are well cooked.

Garnish with chopped cilantro and serve with rice or parathas.

Spicy Chicken Fry

Ingredients:
10-15 Curry leaves
1 Bay leaf
2-3 pods cardamom
1 cinnamon stick
1 teaspoon coriander powder

Marinade:
1 pound Chicken
2 tablespoons Yogurt
1 teaspoon Turmeric powder
3 tablespoons Chilli powder
1 tablespoon Garam Masala
Salt-to taste
Lime

To Grind:
3 Medium onions
6 Green Chillies
2 tablespoons Ginger-garlic paste
1 Tablespoon Cumin seeds
1 Tablespoon Poppy seeds
1 tablespoon Fenugreek seeds(Methi)

Method:
1.Fry curry leaves and whole spices.
2.Add ground paste,fry till the onions are browned nicely.
3.Add coriander powder.
4.Add Marinaded chicken and fry until the chicken and masala are well cooked.

Garnish with chopped cilantro and serve hot.

Indian Chinese Fried Rice

Ingredients:
3 cups cooked rice
2 cups of Mixed veggies(peas,carrots,cauliflower)
1 onion(finely chopped)
10 pods of garlic(minced)
8 green chillies(chopped)
5 tablespoons soya sauce
1 tablespoon hot sauce
1 1/2 teaspoon powdered pepper
2-3 crushed red chillies
2 eggs

Method:
1.In a little oil,fry the onions,chillies and garlic until the onion is cooked and the garlic is well roasted.
2.Add the sauces and mixed vegetables.
3.Once cooked,add the cooked rice and fry well.
4.Add the pepper and crushed red chillies.
5.Beat the eggs with a little pepper and salt and scramble them on the side.
6.Move the fried rice to a serving dish and top with the scrambled egg.

Serve with Chilli Chicken.

Chilli Chicken

Ingredients:
A.
1 pound chicken
3 tablespoons soya sauce
2 tablespoons vinegar
1 teaspoon chilli powder
1 tablespoon corn flour
1 teaspoon sugar
B.
1 medium onion(finely chopped)
6-7 pods of garlic(minced)
8 green chillies(finely chopped)
1 tablespoon soya sauce
1 teaspoon Hot sauce(tabasco) or green chilli sauce

Method:
1.Mix all the ingredients in Part A and allow the chicken to marinate in this mixture for a couple of hours.
2.In a frying pan,Fry the chicken until it is cooked and coated well .
3.In a different pan,add the ingredients in Part B and fry well until the onions are cooked.
4.Add the fried chicken pieces and saute for a few minutes.

Serve as an appetizer or as a side with Indian fried rice!

Variations:
1.You can chop green peppers and add it to Part B.
2.For the veggies,you can replace chicken with baby corn or cauliflower.
